Why use a Grisaille to Paint Clouds?

In this 30 minutes tutorial Dutch painter Janhendrik Dolsma introduces an old painting technique, the grisaille (painting in grey tones only). He demonstrates how to do a grisaille and how to paint colors on top of it later.
Dolsma explains the advantages of using this technique, while working on a painting (a dune landscape with a huge cloud hovering over it) and explaining every step of the process.
